PAS 280 Advanced Pastry II

Prerequisite: Grade of C or better in PAS 202 and PAS 204

This course is a continuation of PAS 202 with more elaborate tortes and gateaux work. Ice cream and sorbets, plated dessert presentation, and chocolate and candy making will be addressed. (1.2) Proficiency Credit Available (2 EILST) Pass/No Credit Available
